About the Gribble surname

I am writing to you from New Zealand where I have been doing my husband's family tree for about 35 years now.  He descends from Samuel Gribble born 1822 in Redruth, Cornwall and emigrated to NZ, initially with his wife Grace, who died and as a result married an Ann Deeble.  I have confidently got what info I need back to George Gribble b. 1686 also in Redruth.  Unfortunately I am having difficulty with the following and wondered if you could throw some light on the matter.  I have George's father as William who married Catherine Butcher.  I have William's birth down as c.1632 and death as 6 December 1703.  Some entries show quite different dates and I am at a loss as to know how to verify these.  Please can you help.
