The idea that Guibourg was the widow of a Muslim prince is an old legend, not supported by any sources. Wikipedia is not a good source for something like this.
La Geste de Garin de Monglane is a collection of French poems from the 13th century. They contain a heavily fictionalized account of the life of William de Gellone (combined with details from maybe another dozen different people). The story that Guibour was a converted Saracen named Orable is one of those stories.
It's like using Bram Stoker's novel Dracula as a source for the historical Vlad the Impaler.
